Some definitions:
"gîtes d'étape et de séjour": house or chalet in a rural or mountain setting adapted to cater for a larger numbers of people, say families or groups of friends. They have rooms or dormitories to accommodate 10-50 people. Breakfast and meals may be offered by the owners, or you may make arrangements for your own meals.
"chambres d'hôtes" (B&B): homeowners (house, chalet, farm) furnish one or more rooms and amenities to enable you to welcome short-stay paying guests, breakfast included.
"centre d' accueil de groupes": like the "gîtes d' étapes et de séjour" the centre accommodates 10-100 people for short-stays in rooms or dormitories, with or without meals.
"meublés de tourisme" (self-catering lodgings) : this can be a house, chalet or apartments furnished for self-catering independent customers. It is listed by "stars" reflecting its standard of furnishing, comfort and location.
